GREEN CHILE BEEF STEW
(For slow cooker.  Serves 4 to 6)

2 T. OLIVE OIL

2 LBS STEW BEEF, CUT UP SMALL

2 LARGE ONILNS SLICED

Brown beef in bottom of slow cooker a small amount at a time.

ADD:

1 CAN CHOPPED GREEN CHILES, RINSED IN COLD WATER

1 16 OZ. CAN DICED TOMATOES

1 C. CHICKEN BOUILLON

½ TSP SALT

 

 

 

Turn on high until boiling, turn to low and cook 5-6 hours

Serve with:

1 AVACADO. PITTED, PEELED AND DICED

SOUR CREAM

2 LIMES, CUT IN SLIM WEDGES

SOFT, WARM FLOUR TORTILLAS

Serve the stew in a community bowl and let each person pile some a warm tortilla with avacado, sour cream and a spritz of lime.
