PINEAPPLE/COCONUT MUFFINS
(12 small, 6 large)

3/4 C. SUGAR
1/4 C. SOFT BUTTER

2 EGGS
1- 8-3/4 OZ. CAN CRUSHED PINEAPPLE
1 TSP. LEMON JUICE
1/2 TSP. COCONUT EXTRACT
1/2 C. GRATED COCONUT
2 C. FLOUR
3 TSP. BAKING POWDER
1/2 TSP. SALT


 

 

OVEN 375o
PREPARE MUFFIN PANS WITH PAM OR GREASE WELL.

BEAT TOGETHER SUGAR BUTTER AND EGGS UNTIL CREAMY.
STIR IN LEMON JUICE AND EXTRACT. MIX WELL
STIR IN PINEAPPLE AND COCONUT
IN SEPARATE BOWL, SIFT TOGETHER BAKING POWDER FLOUR AND SALT.
ADD TO PINEAPPLE MIXTURE USING BRIEF, SWIFT STROKES .DO NOT OVER BEAT.
FILL MUFFIN CUPS 2/3 FULL.
BAKE FOR 20 TO 25 MINUTES FOR SMALL MUFFINS, 30 TO 35 FOR LARGE.
