PUMPKIN BREAD
(Makes two loaves)
FROM SARA CAREY (PHX.). ONE OF THE BEST COOKS AND NICEST PEOPLE

OVEN AT 350o

IN A LARGE BOWL SIFT:
3-1/3 C. FLOUR
1-1/2 TSP. SALT
2 TSP. BAKING SODA
2 TSP. PUMPKIN PIE SPICE

3 C. SUGAR

MAKE A WELL IN DRY INGREDIENTS AND ADD:
1 C. OIL
2/3 C. WATER
4 EGGS
2 C. CANNED PUMPKIN
1 C. NUTS (OPT.)

 

 

 

 

MIX UNTIL ALL INGREDIENTS ARE MOISTENED BUT DON'T OVER MIX.

POUR INTO 2 LARGE-SIZED, GREASED LOAF PANS.

BAKE FOR AN HOUR OR UNTIL KNIFE INSERTED IN CENTER COMES OUT CLEAN.

INVERT ON RACK TO COOL.
