SIMPLE PEACH PIE (BUT GOOD)
(Serves 6-8)

1 C. SUGAR
3 T. FLOUR
2 T. CORNSTARCH
2 T. ORANGE JUICE
2 T. BUTTER
1 TSP. GRATED ORANGE ZEST
2 C. SKINNED*, PITTED AND SLICED PEACHES.

2 CRUST PASTRY

*DIP A PEACH IN BOILING WATER FOR 30 SECONDS OR SO AND THE SKIN WILL SLIP RIGHT OFF.

 

 


COMBINE SUGAR, FLOUR, CORNSTARCH, ORANGE JUICE, BUTTER AND ORANGE PEEL.
COOK ON MEDIUM HEAT INTIL THICKENED AND WELL MIXED.

POUR INTO PASTRY SHELL.

COVER WITH 2ND SHEET OF PASTRY, MAKING OPENINGS FOR STEAM TO ESCAPE.

BAKE AT 450o FOR 10 MINUTES THEN REDUCE HEAT TO 325o FOR 30 MINUTES.

SERVE WITH ICE CREAM OR ANY OF THAT GOOD STUFF.
