(Serves 12-16)

OVEN 375o

CRUST :
1-3/4 C.GRAHAM CRACKER CRUMBS
1/4 C. FINELY CHOPPED WALNUTS
1/2 TSP CINNAMON
1/2 C. MELTED BUTTER
COMBINE AND PRESS INTO SPRING FORM PAN, BOTTOM AND SIDES.

FILLING:
3 WELL-BEATEN EGGS
1-8 0Z PACKAGES OF CREAM CHEESE
1 C. SUGAR
1/4 TSP. SALT
2 TSP. VANILLA
12 TSP. ALMOND EXTRACT
1 PINT SOUR CREAM

 

COMBINE ALL FILLING INGREDIENTS DOWN TO AND INCLUDING ALMOND EXTRACT.

FOLD IN SOUR CREAM.

POUR INTO CRUST.

BAKE FOR 35 MINUTES.

PULL OUT OVEN SHELF WITH CAKE ON IT AND SPREAD ON THE FOLLOWING TOPPING, MIXED WELL:

1 C. SOUR CREAM
1/4 TSP. ALMOND EXTRACT
1/8 TSP. SALT.

TURN OVEN TO 475o AND BAKE FOR 5 MORE MINUTES.

TURN OVEN OFF AND OPEN DOOR. ALLOW CAKE TO COOL.

CAKE WILL NOT SET UP FIRMLY UNTIL IT HAS BEEN CHILLED IN REFRIGERATOR FOR 4 TO 5 HOURS.
