BRIE OMELET WITH STRAWBERRY SAUCE

(MAKE SEPARATE 2 EGG OMELETS FOR EACH PERSON)

2 EGGS

2 T. HALF AND HALF

WHISK EGGS AND CREAM LIGHTLY

1 SMALL SHALLOT, CHOPPED FINE

SAUTE IN BUTTER UNTIL SOFT.  SET ASIDE

BRIE

STRAWBERRY SAUCE*

 Melt butter in omelet pan to hot, not brown, add eggs and turn to medium heat.  Pull sides of setting egg toward the center replacing it with liquid egg until all is set. Sprinkle shallots on one half and dot them with brie scooped up on the tip of a spoon.  Dot liberally. 

 

 

 

 

 

Fold omelet in half  and cook another minute to heat through.  Drizzle

strawberry sauce over omelet.

STRAWBERRY SAUCE

2 T.  STRAWBERRY JAM

2 T. RED WINE VINEGAR

1/3 C. OIL

PINCH OF SALT

Whisk together jam, vinegar, salt and pepper. Pour oil in a thin stream While whisking continually.
