CILANTRO ROASTED SALMON
(Serves 6-8)

1 CLOVE GARLIC

1 C. LOOSELY PACKED CILANTRO
5 T. OLIVE OIL
JUICE OF ONE LIME

1/8 TSP. SALT
GRINDING OF FRESH PEPPER

6-8 4 OZ. SALMON FILLETS
1 LARGE, SEEDED, CHOPPED TOMATO.

 

 

OVEN 400o

PLACE THE GARLIC, CILANTRO, 2 T. OF THE OIL, LIME JUICE, SALT AND PEPPER IN A BLENDER.
PROCESS UNTIL CREAMY.

BRUSH A BAKING PAN WITH THE REMAINING OIL AND PLACE SALMON ON IT.
SPREAD CILANTRO MIXTURE ON SALMON AND SCATTER TOMATO OVER ALL.
SPRINKLE WITH A LITTLE MORE SALT AND PEPPER.
BAKE 12 TO 15 MINUTES. (TEST WITH A FORK FOR FLAKINESS)
