HOMEMADE STRAWBERRY JAM

2 C. WHOLE STRAWBERRIES

1 C. SUGAR

JUICE OF¼ WEDGE OF LEMON

 

 

RINSE STRAWBERRIES WELL AND REMOVE STEMS.
PLACE IN A HEAVY POT WITH SUGAR ON MEDIUM HIGH HEAT.
WITH A POTATO MASHER, MASH DOWN TWO OR THREE TIMES TO START JUICES RUNNING.
KEEP TURNING THE BERRIES AROUND IN THE SUGAR UNTIL LIQUID FORMS.
REDUCE HEAT TO MEDIUM AND BRING TO A ROLLING BOIL.
FROM NOW ON DO NOT STIR.
COOK FOR 15 MINUTES.
REMOVE FROM HEAT, SPRINKLE TOP WITH LEMON JUICE AND ALLOW TO COOL .STIR.
JAM KEEPS VERY WELL IN REFRIGERATOR.
