PASTA FRESCA
(Serves 2-3)

FROM THE GOOD COOKS AT MOOSEWOOD.


2 LARGE, CHOPPED TOMATOES
3 LARGE BASIL LEAVES
1 LARGE CLOVE OF GARLIC
1 T. OLIVE OIL
LIGHT SALT
A GRINDING OF PEPPER
SPAGHETTI OR ANY PASTA
1 C. CUBED MOZZARELLA
GRATED PARMESAN CHEESE

 

 

 

 

 

BLEND (IN BLENDER):1-1/2 TOMATO, 2 LEAVES OF BASIL, GARLIC AND OLIVE OIL.

ADD SALT AND PEPPER.

COOK PASTA AL DENTE.

MIX TOGETHER WITH TOMATO MIXTURE AND MOZZARELLA CUBES.

SPRINKLE WITH PARMESAN AND THINLY SLICED BASIL LEAF.
