(Serves 4-6)

8 CHICKEN PIECES
1/2 C. FLOUR
1-1/2 TSP. SALT
1/2 TSP. PAPRIKA
1 TSP. CURRY

1 T. BUTTER
1 T. OIL
1 C. WHITE WINE

8 ORANGE SECTIONS
1 C. BING CHERRIES
8 PINEAPPLE WEDGES
AVACADO
SPRIG OF MINT

 


IN PLASTIC BAG, SHAKE CHICKEN WITH THE NEXT 4 INGREDIENTS.

BROWN IN BUTTER AND OIL ON ALL SIDES.
REMOVE TO BAKING DISH ADD WHITE WINE
COVER AND BAKE AT 375o FOR 20 MINUTES.
PLACE ORANGES, CHERRIES AND PINEAPPLE OVER CHICKEN AND RETURN TO OVEN. BAKE UNCOVERED FOR 30 MINUTES. ADD A LITTLE MORE WINE IF NEEDED.
REMOVE TO PLATTER AND ARRANGE FRUIT OVER CHICKEN. GARNISH WITH SLICED AVACADO AND MINT.
