ITALIAN POTATO SALAD
(Serves 4-6)
FROM MY FRIEND SUSAN OF PENASQUITOS, SAN DIEGO

SALAD

1 C. COOKED, PEELED DICED POTATOES
1 C.PEELED, DICED GRANNY SMITH APPLES
1 C.FINELY CHOPPED KOSHER PICKLES
1 C. CUBED HAM
3/4 C. COOKED, CUBED CARROTS
1 SMALL JAR CAPERS (OPT.)
1 DRAINED CAN OF BLACK OLIVES

DRESSING

2 T. SALAD OIL
2 T. LEMON JUICE
1 T. DEHYDRATED ONIONS
1/2 TSP. FINELY CHOPPED PARSLEY
1/4 TSP. SALT

1/2 TO 3/4 C. MAYONNAISE

 

 

 

 

 

 

MIX SALAD INGREDIENTS TOGETHER IN A BOWL.

POUR DRESSING OVER AND MIX WELL.

BEFORE SERVING, ADD MAYONNAISE.

THIS IS A DELICIOUS SALAD AND QUITE A BREAK FROM THE ORDINARY.
