CRAB NEWBURG
(Serves 4-6)
1 STICK BUTTER

3 LBS .COOKED CRAB
3/4 C. MADEIRA WINE
3/4 TSP. PAPRIKA
1/2 TSP. NUTMEG
9 EGG YOLKS
3 C. CREAM

1/4 TSP. SALT
PEPPER

TOAST POINTS OR INDIVIDUAL PUFFED PASTRY SHELLS

 


MELT THE BUTTER, GET HOT AND ADD CRAB. ADD WINE AND COOK A LITTLE. ADD PAPRIKA AND NUTMEG.
BEAT THE EGG YOLKS WITH THE CREAM AND SLOWLY ADD TO THE CRAB MIX. COOK ON LOW TO THICK, SHINY BUBBLES. DO NOT BOIL HARD. ADD:. SALT AND A FEW GRINDINGS OF PEPPER.
(TASTE TEST FOR SALT.)

SERVE ON TOAST POINTS OR PUFFED PASTRY SHELLS.

(THIS IS A GOOD TIME TO BAKE AN ANGEL FOOD CAKE WITH THE EGG WHITES.
