CREVETTES A LA MODE GREQUE
(SHRIMP, GREEK STYLE)

(Serves 4-6)

2 T. OLIVE OIL

1 CLOVE MASHED GARLIC
2-1/2 C. PEELED, CHOPPED TOMATOES
1/2 C. DRY WHITE WINE
1/4 TSP. SALT.
GRINDING OF PEPPER
1/4 C. FRESH BASIL
1 TSP. DRIED OREGANO
1 T. RED PEPPER FLAKES
1/2 C. FETA CHEESE
2 LBS. PEELED, DEVEINED MEDIUM SHRIMP

 

 

HEAT GARLIC AND TOMATOES.
COOK 1 MINUTE.

ADD WINE, SALT AND PEPPER, BASIL AND OREGANO.

COOK 10 MINUTES OVER MEDIUM- LOW HEAT.

IN SEPARATE PAN HEAT THE OIL.

WHEN HOT ADD SHRIMP. COOK ONLY UNTIL PINK. DO NOT OVERCOOK.

ADD SHRIMP TO TOMATO MIX.

SPRINKLE WITH RED PEPPER FLAKES AND FETA CHEESE.

SERVE OVER FAVORITE PASTA.
