DRORA'S FAVORITE VEGETABLE SOUP.
(From my friend Drora in Valley Center, CA.)

2 ONIONS
3 T. BUTTER
2 QTS. WATER
2 GRATED CARROTS
4 C. MIXED VEGETABLES (GREEN PEAS, GREEN BEANS, LIMA BEANS, CABBAGE, CAULIFLOWER, CHAYOTE, ZUCHINNI ETC. THESE LAST ONES SHOULD BE CUT TO BITE SIZE.)

2-1/2 TSP. SALT
1/4 TSP. PEPPER
3 PEELED, DICED POTATOES
2 DICED TOMATOES
2 SPRIGS OF FRESH DILL (OPT. OR SUBSITUTE SLICED FRESH BASIL LEAVES)
1 C. MILK (USE WATER FOR LESS CALORIES)

 

 

 


 

 

 

IN DEEP SOUP POT, LIGHTLY BROWN ONIONS IN BUTTER.

ADD THE 2 QUARTS OF WATER, CARROTS, VEGETABLES, SALT AND PEPPER.

BRING TO BOIL, COVER AND LOWER HEAT.

COOK 10 MINUTES.

ADD POTATOES, TOMATOES AND DILL.

COOK 25 MINUTES UNTIL POTATOES ARE TENDER.

STIR IN MILK.

SERVE HOT.
