(Serves 4-6)

2 EGGPLANTS CUT IN 1/2 INCH SLICES
1/4 C. PARMESAN CHEESE
1/2 C. BREAD CRUMBS

1 T. CHOPPED PARSLEY
1/4 TSP. SALT
1/8 TSP. PEPPER
2 BEATEN EGGS
4 T. BUTTER

 

 

OVEN 400o

IN PIE PAN COMBINE: CHEESE, BREAD CRUMBS, PARSLEY SALT AND PEPPER.

DIP EGGPLANT SLICES IN EGGS THEN IN CRUMBS, SHAKING OFF EXCESS.

HAVE READY 2 COOKIE SHEETS WITH 2 T. MELTED BUTTER ON EACH.

LAY OUT EACH SLICE IN THE BUTTER, TURNING OVER.

BAKE FOR 25 MINUTES, TURNING ONCE AGAIN HALFWAY THROUGH..
