WEST AFRICAN FU FU
(FOR STEWS OR SIDE DISH. MAKES 8-10 BALLS)

1 LARGE YAM OR SWEET POTATO
4 T. MILK
1 LARGE EGG
1 DICED MEDIUM ONION
1/2 C. WATER
4 T. BUTTER
1/8 TSP. GARLIC POWDER

 

 

 

WASH AND PEEL POTATO AND CUT INTO MEDIUM- SIZED PIECES.
PUT IN A POT AND COVER WITH WATER.
BOIL 20 MINUTES AND DRAIN.
MASH WELL.
MIX MILK, EGG, ONION, GARLIC AND BUTTER INTO POTATO.
BY HAND, ROLL INTO 1" BALLS.
ADD FLOUR IF TOO STICKY.
DROP INTO STEW FOR LAST 10 MINUTES OF COOKING.
OR SAUTÉ IN OIL UNTIL BROWN ON ALL SIDES FOR SIDE DISH.
